Blueberry Cream Cheese Bars

Ingredients

For the Crust:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • ¼ teaspoon salt

For the Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

For the Blueberry Filling:

  1. 2 cups fresh blueberries
  2. 1 tablespoon cornstarch
  3. 1 tablespoon lemon juice
  4. 2 tablespoons granulated sugar
Directions
  1. Preheat your oven to 350°F.
  2. Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  3. Make the crust: In a medium bowl, mix the flour, granulated sugar, melted butter, and salt until well combined. Press the mixture evenly into the prepared pan.
  4. Bake the crust: Place the crust in the preheated oven and bake for 10-12 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.
  5. Prepare the filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well blended. Add the eggs one at a time, beating until fully incorporated.
  6. Pour the filling over the cooled crust, spreading it evenly to cover the entire surface.
  7. Prepare the blueberry topping: In a small bowl, gently toss the blueberries with cornstarch, lemon juice, and sugar until coated. Spread the blueberry mixture evenly over the cream cheese filling.
  8. Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the blueberries are bubbly.
  9. Once baked, remove the bars from the oven and allow them to cool in the pan for about 30 minutes. After that, transfer them to the refrigerator to chill for at least an hour before cutting into bars.
  10. Slice and serve: Once cooled, cut into squares and serve
