Move Over Potatoes

Kale, that magical superfood that has turned green leaf eating into a culinary

experience.  Who needs potato chips when you can make your own healthful chips full

of amazing flavor and nutrients!  Did you know that Kale is an excellent source of

vitamins K, A and C are a good source of the minerals manganese, copper, iron and

calcium. Kale is also naturally low in sodium has no cholesterol and no saturated

fat.  When I found out about this I knew I had to try it!

I tossed around the idea of making this palate pleasing snack with my children. I have noticed if they cook with me they are more willing to try the finished product. So we opened our

oversized bag of organic baby kale from Costco, rewashed it, and patted it dry. Then came the fun part, seasoning them. We first tried organic extra virgin olive oil with a pinch of sea salt. We placed the mixture in a gallon sized zip bag and added our leaves. Once gently massaged, we laid out the leaves in a single layer on parchment paper, on an average sized cookie sheet.  We popped it in the oven, and waited. About 25 minutes later, we had crisp green chips of glory. They were seriously gobbled up in five minutes flat. I got a small taste before kale crumbs were licked off tiny fingertips.

I don't know what was more exciting, the fact that I got my kids to eat Kale, or

that they begged to make more; " lets change the flavor this time" they clamored.  A kitchen

experience I would recommend for the young and the young at heart who like to seek out

heart healthy options. Now I know you cannot wait to try this so I'm going to leave

the recipe that I originally found at refinery29.com and then to honor my daughter's

request, I added our "favorite flavor options".

Basic Ingredients

1 bunch kale, washed and dried

1 tbsp olive oil

A pinch of sea salt

Directions

Bake at 300 degrees for 20-30 minutes

Just until the edges turn golden or brown

Devour and remake!

Fun Flavors to Try

2 tbsp soy sauce + 1 1/2 tbsp sesame seeds

Juice of 1 lime + 1 tsp lime zest + 2 tsp chili powder

1 quarter cup sherry vinegar + 2 tsp fine salt

3 tbsp balsamic vinegar + 1 tbsp Dijon mustard + 2 tsp Herbes de Provence

3 cloves garlic, finely chopped + 3 tsp garlic salt

2 tbsp lemon juice + 1 tsp Italian herbs

3 1/2 tbsp of your favorite oil based dressing
