Lemon Chicken Spaghetti & Vegetable Toss

Here's a great recipe  shared by our friend and blogger TJ!  It takes less than 30 minutes and you can use any vegetable(s) that you have on hand (perfect for those of you with leftovers from your Bountiful Baskets!)

Lemon Chicken Veggie Spaghetti Toss

4-5 green onions (scallions), chopped

2 tbs butter

2 tbs extra virgin olive oil

1# boneless skinless chicken breast

3 tbs lemon juice

½ cup chicken broth

3 tbs fresh minced parsley (or 1 tbs dehydrated parsley)

1 tsp seasoning salt

½ tsp lemon pepper seasoning

1# vegetable (your choice of 1” asparagus, broccoli or cauliflower florets, diced summer squash, etc. Frozen stir-fry veggies work well for this also)

1-2 tbs minced garlic

1 packet whole wheat spaghetti

  1. Start spaghetti
  2. In a large skillet (cast iron works great for this), sauté green onions 2-3 minutes
  3. Add chicken, lemon juice, parsley, seasoning salt & lemon pepper; sauté covered for 10 minutes
  4. Add bite-sized vegetable of choice to skillet, add garlic, cover
  5. Cook 7-10 minutes more, or until chicken juices run clear
  6. Drain spaghetti, add to chicken mixture and toss
