After the last slice of turkey has been carved and the last pie is made, we're left with what some might argue is the best part of Thanksgiving: the leftovers. But let’s be honest, there are only so many cold turkey sandwiches one person can handle.
This year, instead of piling everything onto one plate and calling it good, try reimagining those leftovers into something unexpected. Here are a few fun ways to use what’s already in your fridge and savor those leftovers.
Pie Milkshakes
• 1 slice leftover pie (pumpkin, pecan, apple — all work)
• 2 scoops vanilla ice cream
• 1/3 to 1/2 Cup milk (start with 1/3 Cup, add more if needed)
• Add whipped cream and 1 Tablespoon crushed pie crust or chopped nuts for topping
• Blend until smooth. Serve immediately
(Pro tip: add bourbon or espresso for a grown-up twist)

Green Bean Casserole Fried Rice
● 1 Cup green bean casserole
● 1 1/2 Cups cooked rice (day-old is best)
● 1 Tablespoon sesame oil
● 1 Tablespoon soy sauce
● 1 clove garlic, minced
● 1/2 to 1 Cup chopped turkey (optional)
● 1 egg
● 2 Tablespoons crispy fried onions, hot sauce to taste
Directions: Heat oil in a pan, sauté garlic, then stir in the casserole, rice, turkey, and soy sauce. Push to the side, scramble the egg, and mix. Garnish and serve.

Sweet Potato & Ham Shakshuka
● 1 Cup mashed or roasted sweet potatoes
● 1 Tablespoon olive oil
● 1/2 teaspoon smoked paprika
● 1 Cup canned diced tomatoes (drained slightly)
● 1/2 Cup chopped leftover ham
● 3–4 eggs
● Salt and pepper to taste
● Optional: parsley or cilantro for garnish
Directions: Heat oil, add sweet potatoes, paprika, and tomatoes. Simmer and stir in ham. Crack the eggs over the top, cover, and cook until whites are set.
Mashed Potato & Turkey Street Tacos
● 6 small corn tortillas
● 1 1/2 Cups mashed potatoes
● 1 to 1 1/2 Cups shredded turkey
● 1 Cup slaw (store-bought or homemade with shredded cabbage and lime juice)
● 2 Tablespoons hot honey (or regular honey with a dash of hot sauce)
● 1/4 Cup queso fresco or shredded cheese
Directions: Heat tortillas. Spread each with 2–3Tablespoons of potatoes, top with turkey, slaw, a drizzle of honey, and cheese.
